Peanut Butter-Banana-Chocolate Chip Muffins

This are our favorite muffins these days. I tweaked a banana bread recipe- added peanut butter and chocolate chips, and made muffins instead of a loaf to shorten bake time.


1-3/4 C. whole wheat flour
1 tsp. baking soda
1/2 tsp. salt
1/4 C. melted butter
1/2 C. honey
2 eggs, beaten
1/4 C. peanut butter
3 ripe bananas, mashed
1/4 C. hot water
1/2 C. mini chocolate chips

Mix flour, baking soda and salt. In a large bowl, mix butter and honey until smooth. Add eggs and peanut butter and bananas, mixing thoroughly after each. To this mixture, alternately add flour mixture and hot water in small amounts, stirring gently to incorporate. Fold in chocolate chips. Pour batter into muffin tin and bake at 425 for 15-20 minutes. Makes 12 muffins.
